Introducción. Actualmente el consumo de bebidas carbonatadas es muy común en gran parte del mundo; y continúa en aumento cada día. En El Salvador es frecuente en la dieta de la población; mientras que algunos componentes que las constituyen son los responsables de afectar la salud de distintas maneras. Objetivo. Evaluar los efectos a la salud de dos bebidas carbonatadas administradas continuamente durante 10 semanas a ratones experimentales. Resultados. Los resultados de los chequeos clínicos presentaron alteraciones en algunos aspectos evaluados, como deshidratación, piloerección y diarrea. Mientras que, en peso corporal, hubo diferencias significativas entre el grupo control y los experimentales. En la evaluación macroscópica de los órganos, los grupos tratados con las bebidas carbonatadas sufrieron de ciertas irregularidades, tanto en la apariencia como en el color de estos, aunque en su peso no existieron diferencias significativas, a excepción del riñón derecho del grupo tratado con bebida carbonatada 1. Sin embargo, la química sanguínea mostró únicamente diferencia en el colesterol total del grupo tratado con bebida carbonatada 2. Conclusión. La apariencia de los ratones tratados con las bebidas carbonatadas mostró daños notables en la salud, principalmente el daño provocado en la apariencia de los órganos internos.
Introducción: El chocolate posee constituyentes beneficiosos en su capacidad antioxidante y tienen un impacto positivo a nivel cardiovascular. Sin embargo; puede ser considerado como un producto con alto contenido calórico. Por lo cual algunos han optado por el uso de edulcorantes alternativos naturales como lo es la Stevia (Esteviósido). Debido a su bajo índice glucémico, es seguro para utilizar en productos destinados a personas con diabetes y enfermedades de esta índole. Objetivo: Determinar la respuesta glucémica en ratones experimentales tras la administración vía intragástrica de chocolate tradicional artesanal, chocolate tradicional con Stevia y chocolate comercial.Metodología: Se utilizaron cuatro grupos de cuatro ratones cada uno: un grupo control, un grupo de chocolate tradicional artesanal, uno con Stevia y otro con chocolate comercial, la administración de las sustancias fue por vía intragástrica, luego se realizó una toma glucémica basal, posteriormente a los 30 y 60 min se determinó la glucemia. Resultados: El chocolate comercial posee un alto índice glucémico en comparación con el chocolate tradicional artesanal y con Stevia, mostrando diferencias significativas en ratones experimentales tras la administración vía intragástrica de dichas sustancias desde los primeros 30 minutos, luego de 60 minutos sus niveles de glucosa se empezaron a estabilizar. Conclusiones: El chocolate tradicional artesanal y con Stevia posee una menor cantidad de sacarosa, lo cual determinó una baja respuesta glucémica en comparación al chocolate comercial, convirtiéndolos en ideales para el consumo en las cantidades recomendadas, ya que no es propenso a provocar ninguna repercusión en los ratones tratados.
