This study evaluated Bacaba powder produced in a spouted bed as a source of bioactive compounds and high energy value. The conditions influencing the drying process parameters (yield, moisture level, phenolic and anthocyanin retention) as well as simultaneous optimization (optimal conditions) of production were also considered. Drying was most efficient at 75 °C using maltodextrin concentrations above 20.0% (w/w). Higher anthocyanin retention (92.52%) at 65 °C (p = 0.0003), and a maltodextrin concentration of 20.0% (w/w) resulted in high retention of phenolics (95.38%). Accordingly, the operations tested under the desirability function (68 °C, maltodextrin concentration of 21.7% w/w, and air velocity of 1.3 × minimum spouting velocity (Vjm) m s-1) resulted in a process yield of 55.04% and the dry basis (d.b.) composition results were: total phenolics (376.43 mg GAE 100 g-1), energetic value (612.64 kcal 100 g-1), lipids (47.74 g 100 g-1), carbohydrates (27.79 g 100 g-1), protein (15.10 g 100 g-1), and dietetic fiber (8.45 g 100 g-1). The high solubility (92%), flowability (14%), energy, and bioactive characteristics of Bacaba powder suggest the potential for many applications, such as development of dietary supplements, high-energy drinks, milk-based and instant products, and bakery products.
A bacaba é uma palmeira tropical nativa da Amazônia e possui um alto potencial de exploração. Seus frutos são consumidos na forma de polpa, de cor creme-leitosa e de sabor agradável. A caracterização da polpa foi realizada segundo os parâmetros físico-químicos de pH, umidade, cinzas, fibra alimentar, proteínas, lipídeos, carboidratos totais e valor energético. O comportamento reológico das suspensões foi avaliado através de um viscosímetro rotacional na temperatura de 25ºC e os modelos reológicos de Ostwald-de-Waele, Herschel-Bulkley, Mizrahi-Berk e Plástico de Binghan foram ajustados aos reogramas construídos a partir dos dados experimentais obtidos. A polpa de bacaba apresentou um caráter levemente ácido, pH médio de 5,27 ± 0,01, e elevados valores de umidade (84,29 ± 1,05 g 100 g-1), lipídeos (9,10 ± 0,58 g 100 g-1), fibra alimentar (5,60 ± 0,40 g 100 g-1) e valor energético (106,62 ± 9,45 kcal 100 g-1). As suspensões de bacaba na sua totalidade exibiram características pseudoplásticas. O modelo reológico de Ostwald-de-Waele foi o que melhor se ajustou aos dados experimentais para todas as suspensões, apresentando coeficientes de determinação acima de 95% e desvios médios relativos abaixo de 5%. A polpa de bacaba pura e diluída expôs indícios de comportamento de fluido dependente do tempo. A diluição e a adição de maltodextrina propiciaram diminuição da viscosidade aparente em comparação a polpa de bacaba pura. As suspensões de bacaba, exceto a bacaba pura, não apresentaram modificações de viscosidade aparente, em taxas de deformações aplicadas acima de 100 s-1.
Processing of particles in a moving bed, such as a fluidized bed or a spouting bed, is commonly used in the operations of drying, coating, and granulation of particulate systems. This process has applications in the chemical, pharmaceutical and, presently, agronomical industries, especially for seed treatment/coating. This research aimed to analyze the fluid-dynamic behavior of fluidized and spouting beds with different air temperatures and loads of flaxseeds (Linum usitatissimum L.), with estimates of the fluid-dynamic parameters correlated to each process. The parameters were compared with the values obtained from classical correlations in the literature, with indications of associated percentages of deviation. Influence of fluid dynamics on the physiological quality of seeds was assessed by germination tests and the germination speed index. An analysis of the results indicated that seed processing was adequate for processing in dynamically active beds; however, temperatures above 50ºC in both beds caused significant reductions in the physiological quality of the seeds. Processing in a fluidized bed presented a smaller reduction of the physiological properties of the flaxseed.

Este artigo apresenta uma análise da percepção de tutores de EaD de uma Universidade pública do norte do país acerca da mediação pedagógica e, ainda, da prática tutorial. O programa de EaD da instituição foi escolhido por ser vinculado à Universidade Aberta do Brasil (UAB). O embasamento teórico se deu com autores respeitados no meio científico nas áreas da Educação e Educação a Distância, como Mill, Moore e Kearsley, Garcia Aretio, entre outros. A metodologia utilizada foi a pesquisa qualitativa, com estratégia metodológica de estudo de caso. As técnicas de coleta de dados utilizadas foram um questionário, aplicado a 24 tutores, que serviu para definir os critérios de exclusão/inclusão dos participantes e entrevistas semiestruturadas. Foi realizada também uma visita num polo de EaD da instituição investigada, com a finalidade de se conhecer o lócus de pesquisa do tutor presencial. Procedemos depois à análise dos dados usando a técnica de análise de conteúdo de Bardin (2011). Os resultados concluem que os tutores avaliam a sua prática tutorial e a mediação pedagógica como positivas, mas reconhecem que precisam de uma melhor formação continuada em Educação a Distância e de uma maior interação com a equipe polidocente, em especial com os professores formadores. A pesquisa também conclui que é necessário maior investimento no tutor, que é peça fundamental na construção do conhecimento do aprendente na Educação a Distância.
