Objetivou-se determinar a composição centesimal e o potencial antimicrobiano das PANC’s Yucca guatemalensis e Hovenia dulcis. O teor de proteínas, cinzas, lipídios e umidade foram determinados pela metodologia descrita pelo IAL, as fibras de acordo com o método Ba6a-05 da AOAC e os carboidratos por diferença. Foram obtidos extratos aquosos e hidroalcoólicos das plantas. A atividade antibacteriana dos extratos foi avaliada através de ensaios de disco-difusão e determinação da CMI e CMB, frente a cinco bactérias. Os resultados mostram que as PANC’s testadas podem ser alternativas viáveis para complementar a alimentação humana, além de poder ser utilizados como antimicrobianos naturais.
