АНОТАЦІЯ Стайоха Богдан Олександрович. Обгрунтування параметрів попередньої підготовки абрикосів на соковіддачу.-Рукопис. Дослідження на здобуття освітньо-кваліфікаційного рівня магістра за спеціальністю 181 «Харчові технології».-Тернопільський національний технічний університет імені Івана Пулюя, Тернопіль, 2019. Проаналізовано класифікацю плодово-ягідних соків, технологічні особливості виробництва соків та їх біологічну цінність. Вивчено хімічний склад абрикосів та проведено фізико-хімічні дослідженя різних його сортів. Отримані результати показали, що вихід соку з рослинної сировини залежить від початкової проникності цитоплазми і її здатності протистояти зовнішнім впливам в процесі попередньої обробки і послідовного отримання соку. Науково обгрунтовано, що при попередньому заморожуванні, нагріванні, обробці НВЧ-хвилями вихід соку збільшується. Тому використання удосконаленої технології виробництва соку з абрикосів дозволяє отримати сік з високими органолептичними показниками якості.
