In this work, soybean oil enzymatic hydrolysis was studied in several operational and reactional conditions using a phospholipase as catalyst. In a first approach, different ultrasound configurations were evaluated and compared to a control reaction. Direct enzyme exposure to ultrasonic irradiation has shown an increment on initial hydrolysis rate but also led to a great enzymatic deactivation and a lower products yield. Reaction performed in two step has shown better results. In this methodology, substrate was pre‐emulsified under ultrasonic irradiation and after that the enzyme was add to start the reaction. In a second approach, surfactant concentration, pre‐emulsification time, enzyme fraction, and oil/water ratio were evaluated. An unexpected behavior was observed on the oil/water ratio experiments. There was a large decrease on the hydrolysis rate around 0.4 oil/water ratio. This phenomenon was thoroughly investigated and it was correlated to the inversion of the continuous phase on the emulsion. Practical applications: Phospholipases can be used as an alternative to conventional lipases for oil modifications in the food/pharmaceutical industry. These reactions are usually slow and can take up days to complete conversion. Ultrasound technology can highly enhance lipase catalyzed oil reaction kinetics, but its application is not fully developed. This paper presents distinct methods to apply the ultrasound on phospholipase catalyzed oil hydrolysis reaction and evaluates several operational conditions. The results obtained in this study can be used to fix operational parameters and reduce the reaction time on the oil hydrolysis reaction. RESUMO -Os ácidos graxos possuem diversas aplicações industriais e servem de substratos para inúmeros produtos, principalmente dentro da indústria alimentícia, onde um alto grau de pureza se faz necessário e é dificilmente alcançado quando sua produção envolve catalisadores químicos. Além disso, a reação de hidrólise geralmente necessita de altas temperaturas e pressões para ocorrer, o que pode ser contornado com o uso de enzimas (lipases) como catalisador, as quais utilizam condições reacionais mais brandas. Dentro deste contexto, este projeto teve como principal objetivo avaliar o processo de hidrólise enzimática do óleo de soja em um reator de leito fixo tubular usando como catalisador a enzima Lipozyme TL IM e avaliar os efeitos da razão mássica água/substrato e da temperatura no rendimento da reação por meio de um planejamento experimental. As reações de hidrólise foram realizadas a temperaturas de 20, 25 e 30°C, em concentrações de 4, 8 e 12% de água em relação à massa total e tempo de residência de uma hora. Nas melhores condições, foi produzido um óleo com acidez final de 24,46%.
RESUMO -Os combustíveis no Brasil têm sido produzidos em grandes escalas, gerando empregos e promovendo crescimento econômico e segurança energética. Biodiesel é um combustível alternativo ao diesel de petróleo, feito a partir de fontes renováveis tais como, óleos vegetais e gorduras de origem animal que reagem com um alcool na presença de catalisadores. A hidroesterificação é uma das rotas de produção de biodiesel e que tem sido muito investigada, consistindo em uma etapa de hidrolise seguida de esterificação. Estas reações quando realizadas com catalisadores heterogêneos, necessitam de altas temperaturas e pressões para ocorrer, o que pode ser contornado com o uso de enzimas como catalisador, as quais utilizam condições mais brandas. O crambe é uma oleaginosa que possui condições agronômicas favoráveis e uma considerável fonte de óleo não comestível. Este trabalho teve como objetivo investigar a reação de hidrólise enzimática do óleo de crambe, visando a produção de ácidos graxos livres, empregando a lipase Lecitase Ultra (Fosfolipase A1), em reator batelada com agitação orbital. Um planejamento de delineamento central do composto rotacional (DCCR) foi empregado para estudar os efeitos das variáveis, temperatura, fração água/óleo (A/O) e fração de enzima/substrato (E/S, onde, S = massa de total de água e óleo), no rendimento da reação que foi acompanhada a partir da análise de acidez. O rendimento foi de 65,36%, durante 12 horas de reação à 50 ºC. INTRODUÇÃOO esgotamento das fontes de energia não renováveis, como petróleo e o carvão, tem impulsionado novas pesquisas por combustíveis derivados de fontes renováveis de energia. Como exemplo tem-se o biodiesel, um combustível não fóssil, renovável, atóxico, o qual pode substituir total ou parcialmente o diesel de petróleo em motores de ciclo diesel (GAMA et al., 2010). A produção e o uso do biodiesel no Brasil propiciam o desenvolvimento de uma fonte energética sustentável sob os aspectos ambiental, econômico e social e também trazem a perspectiva da redução das importações de óleo diesel. (ANP, 2014). O processo mais comum de obtenção de biodiesel é a transesterificação, que se refere a uma reação química catalisada, envolvendo óleo vegetal e um álcool para se obter ésteres alquílicos de ácidos graxos como produto (isto é, o biodiesel) e o glicerol como subprotudo (ZHANG et al., 2003). Geralmente na presença de um catalisador homogêneo ou heterogêneo (GAMA et al., 2010).Recentemente vem sendo estudado também o processo de hidroesterificação, que envolve uma etapa de hidrólise seguida de uma etapa de esterificação. RESUMO -A presença de cobre em águas residuais industriais é uma relevante forma de poluição, e para o desenvolvimento de processos de troca iônica usados para a remoção do metal é necessário conhecer as características cinéticas de transferência de massa. Neste trabalho, o equilíbrio foi representado através da isoterma de adsorção de Langmuir. Foram avaliados três modelos cinéticos para o par iônico Cu +2 -Na + : adsorção na superfície, resistência no filme externo e difusão interna. Os experimentos foram realizados à temperatura de 25 o C e pH inicial igual a 4. A isoterma de Langmuir representou o equilíbrio de forma satisfatória, e os três modelos cinéticos apresentaram eficiências muito similares na representação dos dados experimentais, não sendo possível determinar a etapa limitante de transferência de massa. No entanto, através da avaliação do comportamento dos parâmetros estudados, foi possível concluir que o modelo de difusão interna foi o que apresentou maior confiabilidade.
