Als wij de auto lenen van mijn vriend's vader beloven we hem altijd om een lokaal biertje mee terug te nemen van onze bestemming. Dit is helemaal geen moeilijke opgave: ieder zelf respecterend Nederlands dorp of stad heeft tegenwoordig een lokaal, ambachtelijk gebrouwen bier. Utrecht, de Veluwe of het dorp met 9000 inwoners waar ik ben opgegroeid: overal kwamen we terug met een biertje of twee van een lokale brouwerij.
Onlangs verscheen het Amsterdamse journalistieke onderzoek 'Eetparadijs'. In dit onderzoek naar de voedselomgeving van de stad stellen de auteurs dat wanneer de wereld verandert, de voedselomgeving en daarmee onze eetcultuur mee veranderen. De eetcultuur anno 2018 typeert zich als snel, maar wordt ook bepaald door ultra-gezonde voedselbewegingen gekenmerkt door superfoods en 'foodmeisjes', veelal aangewakkerd door sociale media. Het belang van eetcultuur is ook terug te vinden in de reguliere media. De Britse krant 'The Guardian' typeert voedsel bijvoorbeeld als het nieuwe rock 'n' roll en vergelijkt chefs en restaurants met popsterren, compleet met een fanschare die de nieuwste gerechten willen proeven.Eetcultuur gaat hierbij verder dan enkel consumeren. De beleving rondom het consumeren blijkt ten minste even belangrijk te zijn. Wat men eet is belangrijk, maar waar men eet wordt ook steeds belangrijker. In Groot-Brittannië, maar ook in andere Westerse landen, openen om de haverklap nieuwe foodhallen, bekend naar het concept van de beroemde Mercado da Ribeira in Lissabon of de Chelsea Market in New York. In deze hallen worden verschillende etenswaren verkocht door veelal kleinere ondernemers of restaurants. Deze worden gegeten in een informele sfeer waarbij het mogelijk is om verschillende gerechten van verschillende aanbieders te proeven. Ook grote bedrijven en investeerders storten zich inmiddels in deze wereld van casual dining. Voedsel is hip, maar blijkt voornamelijk ook een economisch succes.
