Food security occurs when all members of a household have reliable access to food in sufficient quantity and quality to maintain an active and healthy lifestyle. Given the important biological and social value of food for humans, food and food sufficiency have been traditional topics of study among biological anthropologists. The focus on food insecurity, however, has emerged within the past two decades and recent global events, including the food crisis of 2007/2008, have led to renewed interests in the topic of food insecurity and wellbeing. Here, we review current and novel threats to food security, current thinking on measurement and definitions, and then outline a model that links food insecurity to coping strategies and then to health outcomes. We suggest that coping strategies are typically context-specific and can be food and nonfood based. We further suggest that coping strategies may impact health quite broadly, not just through nutritional pathways. We then review available data on the relationship between food insecurity and nutritional status, chronic diseases, infectious diseases, and mental health. Our review highlights the far reaching consequences of food insecurity for human wellbeing but also the considerable variability in its effect and our limited empirical knowledge of the pathways through which food insecurity impacts health. We conclude by offering thoughts on how biological anthropologists might contribute to growing our understanding of food insecurity and human health and wellbeing. Yrbk Phys Anthropol 55:72-94, 2012. In the U.S., child overweight is on the rise and is implicated in later adult chronic illness. Given that overweight is hardly tractable, prevention as compared to treatment is seen as a better alternative for lowering the risk of long-term health consequences. To increase the success of prevention efforts, many argue that programs must be "culturally sensitive and targeted toward specific populations at greater risk. However, there exists a limited understanding of how overweight is distributed across the landscape, among and within populations and groups. This paper reports the prevalence of overweight among 54 school children in a rural, Appalachian community with a high rate of poverty, and it compares boys to girls. Thirty-seven percent of boys and 10.3% of girls are overweight, based on the 90th percentile body mass index (BMI). Analysis of food intake indicates a pattern of food consumption that is high in fatty and sugary foods and low in fruit and vegetable consumption. Analysis of activity indicates that children report more low-intensity activity than high; that overweight children report more episodes of video/computer play compared to nonoverweight children; and that boys spend more time than girls in front of the computer/television screen.
In the United States, over 39 million people live in poverty. Although poverty affects all groups, it disproportionately affects those whose access to coping resources is most limited, i.e., ethnic minorities and children. Since the 1970s, poverty rates have risen steadily in this country, especially for children. Today more than 15 million poor American children face immediate and life-long risk to health, growth, and school achievement. This review considers risk in these areas and finds that poor children, especially African-American children, experience increased prevalence of low birthweight, chronic illness, and lead poisoning, with reduced levels and quality of healthcare. At the same time, poor children exhibit higher rates of low stature, particularly Mexican-American children, and overweight. Poor health and poor growth are likely to lead to poor school achievement via deficits in cognitive functioning, behavior and activity, and increased absenteeism and school failure. Biological anthropologists are in a unique position to contribute to the research on poor children in the U.S and to assist in clarifying the complex pattern that leads to intergenerational poverty. To this end, a number of areas are identified where additional and/or continued research is needed. o
The research reported in this paper examines the relationship between household socioeconomic measures, child growth, and nutritional status in a community in eastern Kentucky with a high rate of poverty. It is based on the premise that child growth and nutritional status reflect the social circumstances in which they occur. 21.6% of the children exhibited low height (<15th percentile of National Center for Health Statistics [NCHS] reference values), with 13% of the girls exhibiting stunting (<5th percentile). Thirty-three percent of the children exhibited overweight, and 13% exhibited obesity (>85th percentile and >95th percentile of National Health and Nutrition Examination Survey [NHANES] reference values, respectively); 21.4% of boys were obese, compared to 8.7% of girls. Analysis of variance indicated that child stature is best explained by the father's education level interacting with employment status, and by the mother's employment status interacting with household poverty level. Weight is best explained by the mother's employment status. However, the relationships among socioeconomic measures and growth outcomes differed by gender of the child. These issues are discussed in light of the anthropology literature and the situation in Bridges County, Kentucky where the research took place.
