RESUMOOs frutos do açaizeiro (Euterpe precatoria Mart.) procedentes de diferentes ecossistemas amazônicos foram processados para a obtenção de suco. O produto foi avaliado quanto à composição centesimal (umidade, cinzas, lipídeos, proteína, glicídios e fibra alimentar), minerais, ácidos graxos e antocianinas. Os frutos foram comparados quanto ao peso, constatando-se uma variação significativa de 1,1 a 2,0 g entre eles. Com relação ao suco, verificou-se baixa concentração de proteína e alto teor de energia devido, principalmente, à presença de lipídeos cuja concentração variou de 4,24 a 9,74%. Dentre os minerais, o potássio foi o mais abundante com teores na faixa de 73,78 a 376,69 mg 100 g-¹ (do suco), seguido do cálcio (15,99 a 57,85 mg 100g -¹). O ferro foi encontrado em concentrações minoritárias, na ordem de 0,43 a 1,2 mg 100g -¹. Com relação aos ingredientes funcionais, o suco de açaí apresentou concentrações importantes de fibra alimentar (2,37 a 7,8%), e antocianinas, variando de 128,4 mg 100 g-¹ , nos frutos de coloração verde, procedentes de Parintins, até 868,9 mg 100 g-¹ nas amostras de Manaquiri (base seca). Na fração lipídica, destacou-se ainda a presença do ácido graxo oleico (18:1), com porcentagem média de 68,2% no total de ácidos graxos, seguido do ácido palmítico (16:0) com 17,5%. Tais resultados reforçam o potencial do açaí como fonte de energia, lipídeos, fibra alimentar, antocianinas, ácido graxo monoinsaturado e minerais. O presente estudo irá contribuir para a ampliação da tabela de composição química de alimentos e, consequentemente, auxiliar nos programas de melhoramento genético, mercado e inclusão social. Resumo: Na Amazônia, a exploração comercial de hortaliças se dá empregando variedades e/ou cultivares previamente avaliadas, tendo-se como critério prioritário, os rendimentos médios mais elevados nos ensaios de competição e adaptabilidade. As condições agroclimáticas aliadas a práticas fitotécnicas podem interferir diretamente nos níveis de produtividade e qualidade da alface. Neste sentido, objetivou-se com este ensaio avaliar a produtividade, sanidade foliar e estabilidade morfológica de cultivares de alface americana, cultivadas em condições de campo no período chuvoso entre os meses de abril a junho de 2011, em canteiros convencionais na região de Presidente Figueiredo no Estado do Amazonas. O delineamento experimental utilizado foi de blocos ao acaso em esquema fatorial, provenientes da combinação de 20 cultivares de alface americana e duas condições de cultivo (com e sem mulching sobre os canteiros), com quatro repetições. Todas as cultivares apresentaram melhor desempenho, sobre as características agronômicas e sanidade de folhas exteriores, exceto para comprimento do caule, quando cultivadas em canteiro com mulching, evidenciando que esta prática contribuiu para melhorar as características de produtividade e qualidade das plantas. Dentre as cultivares estudadas na presença ou ausência de mulching, Gloriosa, Havassu, Healtmaster, Kaiser, Lucy Brown e Tainá apresentaram melhor comportamento sobre as características desejáveis para fins de comercialização e podem ser recomendadas para o cultivo em condições agroclimáticas similares ao presente estudo. Abstract:In the Amazon, the commercial exploitation of vegetables takes place using previously assessed varieties and/or cultivars, having as the main criterion the highest average yield in tests of competition and adaptability. Agroclimatic conditions, allied to phytotechnical practices, can directly interfere with quality and levels of productivity in the lettuce. The aim of this test therefore, was to evaluate the productivity, the health of the leaves and the morphological stability of lettuce cultivars grown under field conditions in conventional beds, during the rainy season between the months of April to June of 2011, in the region of Presidente Figueiredo in the State of Amazonas, Brazil (AM). The experimental design was of randomised blocks in a factorial scheme, resulting from the combination of 20 lettuce cultivars and two systems of cultivation (in beds with and without mulching), with four replications. All the cultivars performed better as regards the health of the outer leaves and agronomic characteristics, except for stem length, when grown on beds with mulching, demonstrating that this practice helped to improve characteristics of productivity and quality in the plants. Considerando a relevância da fibra alimentar na proteção, manutenção e recuperação da saúde e a escassez de tabelas de composição química dos alimentos no que se refere a frutos amazônicos, determinou-se o teor de fibra alimentar em algumas populações de cubiu (Solanum sessiliflonun Dunal), camu-camu (Myrciaria dubia (H.B.K) Mc Vaugh) e açaí (Euterpe oleracea Mart) pelo método enzímico-gravimétrico. Os frutos tiveram diversas procedências: cubiu, da Estação Experimental do INPA/CPCA, camu-camu do município de Barcelos e ao longo da bacia do Rio Amazonas e açaí da bacia do Rio Solimões. Verificou-se que a concentração de fibra alimentar total e insolúvel nas amostras de açaí provenientes de Benjamin Constant (7,66±0,33 g e 6,60±0.IX g) e Anamã (7,45±0,25 g e 6,51±0,04 g), foi significativamente maior (p<0,05), quando comparada com os de outras procedências. Com relação ao cubiu, as maiores concentrações de fibra alimentar total foram detectadas nas amostras Alejo (4,38±0,0 g) e ACSI (3,88±0,18 g), salientando-se que fração analisada inclui a casca, cuja contribuição foi significativamente maior (p<0,05) nas frações insolúvel, solúvel e total. Da mesma forma, os teores de fibra alimentar total (6,18±0,25 g) e insolúvel (5,08±0,14 g) da casca do camu-camu, foram superiores aos encontrados nas demais amostras. Portanto, os frutos analisados apresentaram um potencial relevante como fonte de fibra alimentar, sendo mais uma opção para contribuir na adequação nutricional da população Amazônica e do país.
