RESUMO-o tamarilho (Solanum betaceum) é uma espécie de clima subtropical explorado comercialmente como fruto de exportação em países como a Colômbia e nova Zelândia. no Brasil, esse fruto tem caráter exótico, e suas características nutricionais e tecnológicas são pouco conhecidas. o presente trabalho teve por objetivo caracterizar frutos de duas variedades de tamarilho, amarela e vermelha, oriundos da região do Vale do Jequitinhonha no estado de minas Gerais. Foram analisados os aspectos físicos, físico-químicos e a composição centesimal. os resultados da caracterização centesimal e físico-química mostraram haver uma grande semelhança entre as duas variedades, excetuando o percentual de cinzas (0,152 ± 0,046 e 1,054 ± 0,339) e de açúcares redutores (5,283 ± 0,463 e 2,979 ± 0,090). o rendimento das polpas foi superior a 67%, o valor médio de sólidos solúveis totais foi da ordem de 12,5% e os valores da relação SSt/act foi superior a 7,0. tais medidas permitem considerar o tamarilho um fruto com potencial para o consumo in natura e possível matéria-prima para a indústria de alimentos. Os alimentos funcionais são descritos como agentes que oferecem diversos benefícios a saúde e que, aliado ao seu valor nutricional, desempenham papel importante na prevenção e controle de doenças crônicas degenerativas, como diabetes, câncer, dentre outras. As substâncias bioativas encontradas nesses alimentos podem ser divididas nas seguintes categorias: probióticos e prebióticos; nesses alimentos estão dispostos componentes benéficos a saúde como: enxofre, nitrogênio, pigmentos, vitaminas, compostos fenólicos, ácidos graxos polinsaturados e fibras. Essas substâncias podem ser encontradas em alimentos isolados, suplementos dietéticos, produtos fitoterápicos e alimentos processados, sendo estes últimos enfatizados no presente estudo de revisão. Além disso, os avanços na ciência e tecnologia de alimentos favorecem cada vez mais a produção comercial de alimentos com propriedades funcionais, benéficos a saúde, em especial os produtos lácteos com característica probiótica. A presente revisão sistemática teve como objetivo selecionar e analisar estudos com foco na produção e importância dos alimentos funcionais adicionados a produtos lácteos para a dieta humana e seus benefícios à saúde. Os dados da literatura disponíveis demonstram a considerável aceitação dos consumidores pelos alimentos funcionais e o grande potencial destes alimentos no mercado de produtos lácteos, com resposta socioeconômica extremamente positiva.
