SummaryA field study was carried out in the largest Brazilian city in order to evaluate the quality of coffee prepared and sold for out-of-home consumption, using a logit model. It was shown that the decision on coffee quality was taken by the coffee house owner or manager based on his perception of the socio-economical class of the consumers, the prevalent gender, the participation of coffee in the invoicing and the coffee brewing method. Coffee agribusiness in the State of São Paulo is the most relevant in the country. However, it does not have the strongest productive base, being surpassed by other states that stand out in the crop. In São Paulo, there was a drop in the cultivated area in the intercensitory space of LUPAs 2007/2008 and 2016/17, but more than compensated by the increase in the productive park, reflecting in greater crop density. The adoption of agronomic technologies (soil analysis, acidity correction) intensified as well as the use of machines to harvest and irrigate crops. The access of the worldwide computer network and the use of computers in the activity are already a reality of a majority share of coffee growers in São Paulo. The demand for credit and rural insurance has become more frequent among coffee growers, which leverages investments and increases the resilience of farms. In terms of profile, coffee growers remain associated with cooperatives, but there was less participation in associations and unions. Despite the increased participation of private technical assistance in advising coffee growers, the performance of the public extension is still responsible for most of the properties served. The evolution of the participation in the formation of income in properties where there is coffee plantation showed an increase in those farms in which more than 40% of the income came from coffee growing. The current census data show that São Paulo's crop maintains a trend of gaining productive efficiency and, consequently, of competitiveness.
The cycle of economic crisis that affected the Brazilian economy between 2014 and 2017 raised the unemployment rate to a level never observed in the recent period. This fact intensified the search for occupations in the informal market, catapulted that were by the so-called process of uberization of employment. This exploratory and non-probabilistic study sought to characterize, through face-toface interviews conducted application of objective questionnaires, the profile of breakfast vendors positioning their “tabuleiros” in public sales and their clients. Prior to the presentation of the results obtained, we sought to situate the dimension of street commerce by analyzing statistical data on employment and unemployment research The systematization of the results of the interviews conducted showed relevant aspects both about the characteristics of the entrepreneur and his business, measuring items such as quantity of coffee distributed and gross sales of the point of sale and difficulties of coexistence with supervision / policing. In his part, in the interview with random clients, it was found that in addition to the consumption habit, the need for social interaction prevails, reserving the time of breakfast to interact with other regulars, including lasting bonds of friendship.
