A comida de rua é um fenômeno mundial de grande importância cultural, econômica e nutricional, porém as precárias condições de comercialização dos alimentos constitui elevado risco de aquisição de doenças. No presente estudo, por meio de uma revisão integrativa analisou-se a produção científica dos últimos dez anos sobre o tema com o objetivo de conhecer o perfil socioeconômico dos vendedores ambulantes e as condições higienicossanitárias dos alimentos comercializados nas ruas das principais cidades brasileiras. A amostra final desta pesquisa constituiu-se de dez artigos originais cujos resultados caracterizaram a comida de rua brasileira como precária em relação à higiene de utensílios, de equipamentos e de locais de instalação dos ambulantes, situação agravada pela ausência de higienização das mãos dos vendedores que manipulam dinheiro e comida simultaneamente. A análise microbiológica em alimentos, bancadas e mãos dos vendedores detectou quantidades de microrganismos acima do permitido pela legislação, corroborando as pesquisas feitas por meio de observações in loco. Percebeu-se na análise dos referidos artigos que a ausência de padronização dos dados coletados nesses estudos é prejudicial à extrapolação dos resultados. Dessa forma, no presente artigo foi proposto um instrumento de coleta de dados que permitirá a obtenção de informações padronizadas sobre o setor.
