The aim of the present study was to evaluate the chemical quality parameters regarding frozen Pangasius hypophthalmus specimens from Vietnam. The proximate composition, pH, ammonia, biogenic amines (BAs), total mercury (Hg), malondialdehyde (MDA), and polyphosphate were determined. The moisture, protein, lipid and ash values were between 83.83–85.59, 12.51–14.52, 1.09–1.65, and 0.76–2.38 g 100 g−1, respectively. Fraud by excessive polyphosphate addition was detected in 30% of the samples whereas Hg above the recommended limit was observed in 50% of the samples. With regard to compounds from the degradation process, low concentrations of individual BAs and pH values were found in this study and ranged from 5.88 to 6.18, except for samples with polyphosphate >1 g 100−1 (pH > 7.00) were observed in the present study. However, ammonia concentration indicated that a degradation process initiated in 80% of the samples (0.12–0.34 NH 3 g−1) and 20% of the samples (1.87–1.94 μg NH 3 g−1) were in an advanced deterioration process. Furthermore, MDA values (1.21–7.88 mg kg−1) suggested some failures, mainly during transportation and/or storage. We concluded that quality control measures must be implemented on the Pangasius production chain to improve the quality of products provided to consumers worldwide.
Com o objetivo de comparar a qualidade físico-química dos méis inspecionados com méis adquiridos no mercado informal, comercializados no estado do Rio de Janeiro, analisaram-se 35 amostras de méis, sendo 25 inspecionados e 10 clandestinos. Os parâmetros avaliados foram: fraude por adição de amido, açúcares redutores em glicose e não redutores em sacarose, hidroximetilfurfural, determinação da acidez e proteínas. Os resultados obtidos demonstraram que 100% das amostras dos méis clandestinos estavam fora dos parâmetros em pelo menos uma das análises, apresentando os seguintes resultados: 70% das amostras demonstraram presença de amido; 30% encontravam-se abaixo dos padrões para proteína; na Prova de Fiehe, 30% apresentaram coloração vermelho cereja e 30% coloração salmão; 50% estavam abaixo do limite para açúcares redutores, 20% excederam os padrões para sacarose e 40% ultrapassaram a acidez estabelecida. Os resultados encontrados nos méis inspecionados foram mais satisfatórios, entretanto, apresentando alguns valores alterados: 12% positivos para adição de amido, 12% positivos para HMF, sendo 4% com coloração vermelha, sugestiva de presença de açúcar invertido e 8% com coloração salmão, que indica que o mel foi aquecido intensamente ou foi estocado por período prolongado em temperatura elevada, 4% fora dos padrões para açúcares redutores e 12% com acidez acima do estabelecido pela legislação.
A validade comercial de sardinhas das espécies Sardinella brasiliensis e Cetengraulis edentulus mantidas sob refrigeração em gelo (0+2°C) foi determinada por parâmetros analíticos físico-químicos, bacteriológicos e sensorial. Nas duas amostras, os teores de Bases Voláteis Totais (BVT) e Trimetilamina (TMA) atingiram o limite máximo recomendado na legislação (30mg N100g-1 para BVT e 4mg N100g-1 para TMA) após 14 e 8 dias de estocagem, respectivamente. O conteúdo de histamina, putrescina e cadaverina se manteve em níveis inferiores a 2.0µg g-1 nas duas amostras durante o período de estocagem. A produção de hipoxantina variou de 0,65 a 2,62µmol g-1 nas amostras de S. brasiliensis e de 1,40 a 2,09µmol g-1 nas amostras de C. edentulus. A contagem inicial de Enterobacteriaceae foi de 3,81log UFC g-1 e 3,82log UFC g-1 atingindo, ao final de 18 dias de estocagem, 6,57log UFC g-1 e 6,87log UFC g-1, nas amostras de S. brasiliensis e C. edentulus, respectivamente. Para as contagens de bactérias heterotróficas aeróbias mesófilas e psicrotróficas, o limite de 7log UFC g-1 preconizado na legislação internacional foi alcançado após o 12° e 8° dias de estocagem nas amostras de S. brasiliensis e após o 12° e 6° dias de estocagem nas amostras de C. edentulus, respectivamente. O método de índice de qualidade sugeriu, para as amostras de S. brasiliensis, um limite de consumo aceitável inferior a 11 e, para as amostras de C. edentulus, um limite de aceitabilidade inferior a 14. Foi proposta a validade comercial de dez dias para a S. brasiliensis e nove dias para o C. edentulus.
No presente trabalho, objetivou-se avaliar a prática fraudulenta da adição de nitrito e sulfito, e parâmetros físico-químicos de qualidade em carnes bovinas moídas in natura e resfriadas, comercializadas em mercados varejistas do estado do Rio de Janeiro. Avaliou-se também o grau de depleção do nitrito pós-cocção. Os resultados obtidos demonstraram que de 35 amostras analisadas, 37,14% apresentaram nitrito, 11,42% sulfito, 17,14% amônia e 17,14% odor desagradável na prova da cocção. Todas as amostras apresentaram o valor de pH dentro do padrão oficial. A maior concentração de nitrito detectada foi 1,17mg.Kg-1 e a menor 0,173 mg.Kg-1. Após cozimento de amostras onde se detectou nitrito, houve depleção significativa desta substância. A detecção de nitrito e sulfito em carnes in natura além de caracterizar o descumprimento da legislação vigente por parte dos comerciantes, pode representar um risco à saúde da população, devido ao potencial tóxico destas substâncias quando ingeridas em excesso.
The aim of this work was to study the effect of gamma radiation on lipids by TBARS and NMR. The samples of raw whole milk were subjected to gamma radiation from Co60 in doses of 1, 2 and 3 kGy and the production of rancidity was studied through Nuclear Magnetic Resonance (NMR) and Thiobarbituric Acid Test (2-TBARS). The TBARS values increased according to the intensity of the radiation dose applied at the samples, demonstrating correlation between the radiation dose and the production of lipid oxidation. This was confirmed by NMR with the formation of peaks of aldehydes and ketones that were small and similar in the doses of 1 and 2 kGy. In the dose of 3 kGy, the total degradation of milk fat was observed. A correlation between the NMR and 2-TBA was detected
