We studied the effect of substituting partially, cocoa butter (CB) with Sacha Inchi (Plukenetia volubilis L.) oil (SIO) on rheology, bioactive properties, and sensory preferences in potentially functional chocolate. For this 70% dark chocolates were prepared and the CB was substituted with 1.5%, 3%, and 4.5% of SIO. Hardness and viscosity of the SIO-chocolates were significantly reduced compared to the control (5451 AE 658 g; 17.01 AE 0.94 Pa s, respectively). Total phenolic content remained constant while the antioxidant capacity increased up to IC 50 of 2.48 AE 0.10 as the content of SIO increased. The Casson yield stress and Casson plastic viscosity decreased as the amount of SIO increased. Chocolates with 4.5% SIO had a similar color, better glossiness, preferable snap attributes, and were more accepted (7.50 AE 0.08) compared to the control (p < 0.05), measured with a hedonic scale. Then, SIO can improve the bioactive properties of dark chocolates obtaining a potentially functional food with acceptable physicochemical characteristics. SIO can be considered as a new cocoa butter equivalent.
The Criollo cocoa bean is classified as "fine" or flavor cocoas, being perceived as aromatic or smooth with fruity, raisin, floral, spicy, nutty, molasses, and caramel notes. In the present work, gas chromatography coupled to mass spectrometry was used to study the volatile fingerprint of roasted and unroasted Criollo cocoa from four Amazon districts: Nieva, Cajaruro, Copallín and La Peca located in the Amazon Region of Peru. The results showed that the main sensory perception of cocoa is fruit, and this decreases as the roasting intensity increases. A total of 96 volatile compounds were found, of which the esters had a greater presence in the volatile fingerprint of Criollo cocoa. Propyl acetate (3.5%), acetoin acetate (1.3%) and diethyl succinate (0.8%) were found as the characteristic compounds of Criollo cocoa analyzed, which give it its fruit perception. The linalool/benzaldehyde ratio was between 0.56 and 0.89 for La Peca and Cajaruro cocoa. Principal component analysis revealed that the Criollo cocoa in each district has a different volatile fingerprint, whether it is roasted or unroasted beans. The roasting process generates a greater differentiation of the volatile fingerprint of Criollo cocoa.
El principal objetivo de esta investigación fue determinar la actividad antioxidante y el potencial agroindustrial de aceites extraídos de semillas de la región Amazonas (Perú) de siete frutos distintos: Vasconcellea pubescens, Vasconcellea weberbaueri (Harms) V.M, Solanum betaceum, Passiflora edulis, Physalis peruviana, Passiflora tripartita y Spondias purpurea L. Los aceites se extrajeron usando la técnica Soxhlet. Se encontró que los aceites de las semillas de V. pubescens, V. weberbaueri harms, S. betaceum, P. edulis, P. peruviana, y P. tripartita tienen potencial para usarse en el desarrollo de alimentos (IS = 62 a 84; IA = 0.18 a 0.64 %). Se observó heterogeneidad en la estabilidad oxidativa. El aceite de V. weberbaueri fue el más estable (IP = 16.13) y el de V. pubescens (IP = 126.34) fue el más inestable. Se concluye que los aceites examinados tienen un elevado potencial para ser empleados en alimentación humana, en desarrollo de alimentos, en desarrollo de biocombustibles y en otras aplicaciones no alimentarias.
<p>La investigación tuvo por objetivo caracterizar fisicoquímica y organolépticamente el cacao criollo nativo de las parcelas cacaoteras de Amazonas. Se recolectaron muestras por triplicado de cacao criollo de 201 parcelas en los distritos de Amazonas: ElParco, La Peca, Copallín, Bagua, Aramango y Cajaruro, con altitud es de 608, 866, 720, 481, 531 y 893 m.s.n.m, respectivamente. Se determinaron las variables: peso fresco del fruto (PFF), peso de la cáscara (PC), largo del fruto (LF), número de granos por mazorca (GM); así mismo en el mucílago se determinaron: pH, °Brix, y acidez titulable (% ácido cítrico). Organolépticamente, se evaluaron: color de la mazorca (amarillo, rojo y naranja brillante), sabores básicos del mucílago del grano (acidez, astringencia y dulzura), y color del cotiledón fresco del grano (violeta, violeta pálido y blanco). Los resultadosfisicoquímicos fueron sometidos a un ANVA y una prueba de comparación de medias de Tukey (a=0.5%). Para las variables organolépticas se realizó un estudio descriptivo. Los resultados mostraron para cualquier altitud de ubicación de la parcela, hubo estadísticamente diferencias en PFF, PC y LF, obteniendoenAramangoel mayor valor (879.3gde peso total, 734.4g peso de la mazorca y 40 granos por mazorca). En relación al tamaño del fruto largo y ancho los resultados que se encontraron oscilan entre 21.2 a 16.5 cm y 9.7 a 9 cm, respectivamente (Aramango); para Copallín presentó 9.71 cm de ancho, siendo el distrito que indica mayor valor.</p>

En las galletas obtenidas se evaluó la humedad, la acidez total y el pH</span><span class="fontstyle0">; </span><span class="fontstyle0">así como el sabor y dureza. Se obtuvo una galleta con un pH ligeramente ácido y los mejores valores sensoriales fueron para los tratamientos T2 y T4; siendo T2 la formulación de mayor aceptación</span><span class="fontstyle0">.</span>
