El arroz (Oryza sativa L.) en México ocupa el cuarto lugar en la producción de granos alimenticios, detrás del maíz, frijol y trigo. La producción nacional ha cubierto una parte de la demanda interna, recurriendo a las importaciones y situando al país como un importador neto, ya que durante el periodo de 2010 a 2012, 85 % del consumo de arroz pulido provino del exterior. El objetivo de la investigación, es evaluar la competitividad de la producción de arroz en México ante EE. UU. como principal socio comercial, con el fin de proponer acciones que contribuyan a mejorarla. Se realizó un análisis de la competitividad a nivel macroeconómico utilizando los Índices de Ventaja Competitiva Revelada Aditiva, de Apertura Comercial, y de Autosuficiencia Alimentaria. Además de una comparación de subsidios que reciben los productores de arroz en México y los EE. UU. con información de la Organización para la Cooperación y el Desarrollo Económicos (OECD). Identificando como contribuye en la competitividad del cereal, a EE. UU. como exportador de arroz y México un importador. A nivel microeconómico se compararon costos de producción del ciclo agrícola 2012 de EE.UU., con los estados mexicanos de Michoacán, Morelos y Campeche. La producción de arroz resultó no competitiva en Campeche, pero si en Michoacán y Morelos.
ResumenEn México, durante 2000-2012 el arroz ha experimentado disminución en superficie y producción e incrementó en importaciones. Aun así existen estados donde se ha aumentado la superficie. El objetivo de éste estudio es analizar la red de valor arroz en Campeche, Michoacán y Morelos explicando su estructura, nivel de coopetencia y poder entre actores para identificar los factores que explican las tendencias de la producción en estos estados. Se realizaron 43 entrevistas durante 2012 y 2013 a los principales actores, obteniendo información del entorno estatal arrocero y de cada red. Se encontró que la empresa Corporación Alimentaria del Campo en Campeche y Michoacán, toma roles como cliente, proveedor y competidor. Como proveedor del productor establece agricultura por contrato y aporta semilla mejorada, paquete tecnológico y crédito, así la empresa CAC está reactivando y rediseñando la producción arrocera. Morelos comenzó a generar un nicho de mercado como ingrediente gourmet en la cocina nacional.Palabras clave: Oryza sativa L., competencia, ingrediente gourmet, reactivación de la producción, red de valor. AbstractIn Mexico, during 2000-2012 rice it has experienced decreased production and increased surface and imports. Yet there are states where the surface has been increased. The aim of this study is to analyze the network of value rice in Campeche, Morelos and Michoacan explaining its structure, level of coopetition and power among actors to identify factors that explain the production trends in these states. The 43 interviews were conducted during 2012 and 2013 the main players, obtaining information from state rice and each network environment. It was found that the Company Food Corporation in the Field in Campeche and Michoacan, taking roles as a customer, supplier and competitor. As a supplier of contract farming producer establishes and provides improved seed technology package and credit, the company CAC is reviving and redesigning rice production. Morelos began to generate a market niche as an ingredient in gourmet national cuisine.
A maranth (Amaranthus spp) has a wide range of uses as food for human consumption; this crop is characterized by its high protein content and biological value. The objective of the research was to identify which factors favor the consumption of amaranth in Xochimilco, Mexico City, by means of an opinion poll to potential consumers. The information was collected through non-probability convenience sampling, according to the criteria of selecting individuals with the willingness to be surveyed. A survey was applied to 135 people from September to December 2015. A Pearson correlation matrix was obtained through SAS version 9.3. Results indicate that 47 % consume amaranth as candy, 98% mention that its flavor is ordinary. Consumption is not favored by knowing it is a functional food, only 35 % know about its properties. Income level influences the frequency and quantity consumed. People, who study, or work are a niche market, they are willing to consume it for breakfast or as a snack. A transversal strategy, that encourages consumption in Mexico is required, emphasizing that amaranth is a functional food.
Por su naturaleza, el bosque mesófilo de montaña es un buen captador de agua. Pero su cobertura forestal ha disminuido como consecuencia de las actividades antropogénicas, impactando de manera negativa en la captación de agua. Se asoció la evolución temporal (1979-2015) del índice de humedad de las áreas donde existe bosque mesófilo de montaña con los cambios en su cobertura de 1997 a 2016. Los resultados muestran que de 1979 a 2004 el índice de humedad disminuyó como consecuencia de más del 29% de deforestación. De 2005 a 2016 la tasa de deforestación no superó el 1% y el índice de humedad presentó una tendencia creciente. Se recomienda la conservación de este ecosistema como prioritario para mejorar la cantidad de agua en la región.
