Food vegetable products provide a wide variety of active compounds called secondary metabolites, which have antioxidant, antitumor activity, and immunostimulatory properties 2 ; the deterioration of cells in the human body can occur due to the lipid peroxidation present in aerobic cells, between the interaction of free radicals and polyunsaturated fatty acids, however, it is not the only factor that intervenes 3,4 .
