Resumo Este artigo aborda a relação entre discursos técnicos, construções simbólicas e práticas sociais, problematizando suas fronteiras aparentes e analisando as articulações pelas quais se constituem efetivamente. Esta discussão é mobilizada pela questão da higiene envolvida na produção de pães a partir de dois contextos pesquisados etnograficamente: um curso de formação de padeiros, no Senai, e padarias propriamente ditas. À primeira vista, são contextos opostos neste quesito - o Senai possui instalações que primam pela limpeza e enfatiza essa preocupação nas aulas, enquanto os pães produzidos nas padarias pesquisadas dividiam espaço com roedores, baratas, bactérias e instrumentos deteriorados. Contudo, argumenta-se que ambos podem ser entendidos a partir de dinâmicas semelhantes se a “higiene” for considerada segundo uma lógica de apropriação específica, enfatizando as interações sociais particulares a partir das quais seu caráter “objetivo”, “científico” e “impessoal” é mobilizado.
O ensino profissionalizante vem ganhando destaque enquanto fator decisivo para impulsionar o desenvolvimento do Brasil. É de se esperar, portanto, que o tema se torne objeto cada vez mais freqüente de uma série de pesquisas das mais variadas disciplinas. Partindo da experiência que resultou na minha dissertação de mestrado, baseada em um curso de qualificação do SENAI, na área de panificação, este trabalho propõe discutir a questão a partir de uma abordagem etnográfica. Trata-se de trazer à tona certos aspectos que constituem este ambiente da qualificação profissional para refletir acerca das potencialidades e contribuições que estudos de cunho etnográfico podem proporcionar, bem como suas condições de produção. An ethnographic approach to the professionalizing education Abstract The professionalizing education is constantly being highlighted as a decisive factor to launch Brazilian development. It is expected, thus, that this theme becomes more and more frequently the object of a number of researches from the most varied disciplines. Starting from the experience that resulted on my master’s dissertation, based on a qualification course from SENAI, on the area of bread making, this article proposes to discuss the matter from an ethnographic approach. It’s about bringing out certain aspects that constitutes this whole environment of professional qualification to reflect about the potentialities and contributions that ethnographic-like studies may proportionate, such as the conditions of its production. O artigo propõe uma comparação entre práticas de lutas por direitos exercidas por trabalhadores urbanos e trabalhadores rurais através do estudo dos ciclos de greves que ocorreram entre metalúrgicos da área metropolitana de São Paulo e canavieiros de Pernambuco, nos dois últimos anos da década de 70 e nos anos 80 do século passado. O texto centra mais especificamente sua análise no processo de acumulação de forças durante a ditadura, no período anterior aos ciclos de greves. Palavras-chave: Práticas sindicais. Metalúrgicos. Este artigo discute condições e limites do discurso sobre a qualificação profissional a partir do diálogo entre dois contextos pesquisados etnograficamente: um curso de formação de padeiros no SENAI e o cotidiano de padarias. A situação ímpar do pesquisador que busca emprego em uma padaria desafia certa “harmonia” de um discurso institucional sobre o tema, trazendo à tona significados específicos que conformam noções de trabalho, trabalhador e qualificação.
