RESUMO:A Vitis vinifera é considerada uma das frutas mais antigas da humanidade, tendo sua maior produção mundial localizada na China. No Brasil, a região sul é a maior produtora, o que constitui uma atividade com grande importância socioeconômica para o País. Essa fruta pode ser consumida tanto in natura quanto processada, sendo a fabricação de vinho o principal destino da Vitis vinífera. A vinicultura gera grande quantidade de resíduos e seu descarte se torna tóxico para o meio ambiente. Essas sobras possuem compostos antioxidantes e com atividades fitoterápicas, além de notável quantidade de fibras. Em razão disso, essas sobras podem ser utilizadas na indústria farmacêutica, alimentícia e de cosméticos. O presente trabalho objetivou caracterizar a composição química e nutricional de sementes de uva. A variedade da uva utilizada foi a Cabernet sauvignon, oriundas do Estado do Rio Grande do Sul. As sementes foram submetidas à secagem, trituradas e armazenadas. As análises de umidade, proteínas, lipídios, fibras e minerais apresentaram, respectivamente, 14,71%, 8,69%, 13,64%, 41,34% e 1,81%. Obteve-se também o teor de carboidratos por diferença, 19,81%. Ao ser comparada com o rótulo de uma farinha de semente de uva comercial, a semente analisada apresentou valores maiores para lipídio, proteína, e valor energético, enquanto que o teor de carboidrato e fibra mostrou-se maior na farinha comercial. Portanto, conclui-se que é viável a utilização da semente de uva em produtos alimentícios, contribuindo assim para o enriquecimento nutricional dos alimentos e para a redução do descarte indiscriminado dos resíduos. Palavras-chave: Vitis vinifera, farinha de semente, semente de uva. ABSTRACT:The Vitis vinifera is considered one of the oldest fruits of humanity, having a higher global production located in China. In Brazil, the southern region is the largest producer, which is an activity with great socio-economic importance to the country. This fruit can be consumed both fresh and processed, and the manufacture of wine destination in grape. The winemaking produces large amounts of waste and its disposal becomes toxic to the environment. These leftovers have antioxidant activity and phytotherapy activities, and remarkable amount of fiber. As a result, these leftovers can be used in pharmaceutical, food and cosmetic industry. This study aimed to characterize the chemical and nutritional composition of grape seeds. The grape variety used was the Cabernet sauvignon, from State of Rio Grande do Sul. The seeds were dried, crushed and stored.
