A jaca, fruta da Artocarpus heterophyllus Lam., é formada por gomos que contêm uma semente revestida por uma polpa comestível, que constitui em média 28% da massa total do fruto, sendo o restante quase sempre descartado. Estudos de aproveitamentos alternativos com intenção de incrementar o uso industrial da jaca promovendo a sustentabilidade alimentar e agrícola são necessários, valorizando a produção e seu consumo. Dessa forma, estudou-se o enriquecimento proteico dos resíduos de jaca (casca, eixo central, pívide) através da fermentação semissólida, utilizando a Saccharomyces cerevisiae, avaliando a influência da concentração de levedura e resíduos, adotando-se um planejamento experimental. A fermentação ocorreu em estufa de circulação de ar a 35 °C, sistema de batelada, durante 72 h. A fermentação semissólida utilizando 100% de casca de jaca e 3% de concentração de levedura proporcionou maior aumento proteico. Após 72h de processo, o teor máximo de proteína bruta e de aumento proteico alcançados foram de 13 e 100%, respectivamente. O suplemento proteico obtido através da fermentação de resíduos da jaca, utilizando levedura como inóculo, pode ser utilizado como uma alternativa na alimentação de ruminantes.
Among several biodegradable coatings used to extend the shelf life of fresh fruits, those that can be obtained from Moringa oleifera stand out due to their extraordinary biochemical, antibacterial and antifungal properties. Another aspect is their constitution which is composed of proteins, lipids, carbohydrates, carotenoids, vitamins, minerals and natural bioactive compounds, that can be applied for the development of functional foods due to their nutritional and pharmaceutical properties. The objective of this study was to evaluate the effect of bio-based coating produced from different concentrations of Moringa oleifera seed oil added to cassava starch in the postharvest conservation of Tommy atkins mango fruits. The bio-based coating was applied to mango fruits stored at room temperature (27 °C) for 15 days. Mangoes were submitted to the following treatments: moringa oil (Moringa oleifera) in 4 concentrations: 0.5% (v/v) + cassava starch; 1% (v/v) + cassava starch; 1.5% (v/v) + cassava starch and a control treatment without coating (0%), during 15 days of storage (0, 3, 6, 9, 12 and 15 days), adding up to 24 treatments with three replications. The application of moringa-oil-based coating prolonged the postharvest shelf life of the Tommy atkins mango by maintaining the physicochemical and physical properties during 12 days of storage at room temperature when compared to control treatment. This study developed and evaluated the efficiency of methods to produce hydroalcoholic extract of Bishop’s Crown pepper. Analyses were conducted to investigate the effects of independent variables (ethanol concentration of the extracting solution and resting time) over the dependent variables (percent yield, acidity, carotenoids, phenolic compounds, anthocyanin content and vitamin C). The interactions between the variables were studied through seven factorial experiments. Percent yield (Y%), carotenoids, phenolic compounds and vitamin C were the most satisfactory responses found in this research. The ethanol concentration of the extracting solution (ES) presented significant effect in the Y%, showing better results for extracts produced with a 55%-ethanol ES, while carotenoids, phenolic compounds and vitamin C displayed significant differences according to the ethanol concentration, being these substances found in higher concentrations in extracts produced with the use of an 85%-ethanol ES. Therefore, the higher the ES ethanol concentration, higher is the retention of the bioactive compounds.

A palma forrageira (Opuntia ficus indica Mill) e o sisal (Agave sisalana Perrine) são recursos utilizados como alimento para ruminantes no período de escassez de pastagens, por serem plantas adaptadas às condições adversas do semiárido brasileiro. No entanto essas plantas apresentam baixo teor proteico e por isso recomenda-se fornecer na dieta animal sempre associada a um suplemento proteico, porém o uso de concentrados comerciais para suplementação proteica na dieta dos animais aumenta os custos de produção da atividade pecuária na região. Portanto, o estudo de alternativas para aumentar o valor proteico dessas plantas torna-se uma boa estratégia para tentar minimizar tais problemas. O objetivo deste trabalho foi estudar o processo de enriquecimento proteico da palma forrageira e do sisal através da fermentação semissólida, com a utilização da Saccharomyces cerevisiae, avaliando a influência da massa de sisal e concentração de suplemento mineral no teor proteico, visando à produção de um suplemento proteico para ser usado na ração animal. A fermentação ocorreu em sistema de batelada, durante 24 horas, onde o meio foi adicionado ao biorreator, ocorrendo então à adição da levedura e de suplemento mineral comercial, seguindo-se um planejamento experimental 3 2 . Fez-se uma avaliação das variáveis estudadas e observou-se que, após 24 h de processo, o teor máximo de proteína bruta e de aumento proteico alcançados nas fermentações realizadas foi de 3% e 400%, respectivamente. As condições experimentais correspondentes a esses valores foram: concentração de suplemento mineral de 0,1% e massa de sisal de 100%. De acordo com o exposto verifica-se que o objetivo de enriquecer proteicamente forragens através da fermentação semissólida utilizando-se levedura foi alcançado.
