The aim of this study was to evaluate the hygienic and sanitary conditions of acai processing industries in the municipality of Imperatriz-MA, through the application of a checklist of good manufacturing practices obtained from the RDC 218/05 devices, and subsequent assessment of attendance percentage of classification items in accordance to RDC Resolution Nº. 275/02-ANVISA. Studied industries were classified in Group III, with the requirement attendance of ≤ 50. Company C had the lowest percentage of adequacy with only 29.8%. The factors that contributed to this unsatisfactory assessment included the absence of procedures to ensure açai integrity and quality, handlers' lack of professional qualification, inadequate personal hygiene habits, and poor physical, structural and technological installations of the facilities investigated.
A segurança na produção de alimentos pode ser obtida por meio da adoção de práticas adequadas de manipulação, uma vez que estas os protegem de contaminações físicas, químicas e biológicas. Por isso, a Agência Nacional de Vigilância Sanitária (ANVISA) exige, por meio de leis, o cumprimento de boas práticas de fabricação (BPF) de alimentos. Com o presente estudo, portanto, objetivou-se verificar o grau de adoção das ações para controle higiênico-sanitário dos alimentos produzidos em serviços de alimentação e a adequação legal dos serviços às normas de BPF. Trata-se de um estudo observacional, descritivo, no qual avaliou-se 34 estabelecimentos das cidades de Tianguá, Ubajara, Ibiapina, São Benedito e Guaraciaba do Norte, por meio da aplicação de uma lista de verificação de boas práticas, baseada na RDC 216/2004 ANVISA, e categorização conforme o grau de atendimento aos itens, como previsto na RDC 275/2002 ANVISA. Verificou-se que a maioria dos serviços de alimentação visitados estão classificados nos grupos II e grupo III, ou seja, atingiram o máximo de 75% de conformidade. Assim, conclui-se que muitos dos estabelecimentos avaliados não adotam as BPF de alimentos da forma correta e, portanto, apresentam percentual baixo de conformidade à lei, carecendo de ações corretivas para garantirem a segurança dos alimentos produzidos.
Hygienic-sanitary quality of fresh-cut "pearl" pineapple RESUMOConsidera-se uma fruta minimamente processada aquela que passou por etapas tais como lavagem, descascação, corte e embalagem e que mantém as suas características físicas, químicas, nutricionais e sensoriais, vida útil prolongada e segurança. Este trabalho teve como objetivo avaliar a qualidade higiênico-sanitária do abacaxi minimamente processado, mensurando o impacto desta tecnologia sobre o fruto e buscando propor um prazo para a armazenagem segura do mesmo a 5ºC ± 1ºC, a fim de prevenir possíveis danos à saúde dos consumidores desse produto. Os abacaxis "Pérola", obtidos no estádio de maturação adequado, foram submetidos à remoção das coroas, lavagem com detergente e água corrente, sanificação, refrigeração, descascação, corte e enxágüe em água clorada. Posteriormente foram acondicionados em bandejas de polipropileno recobertas com PVC e armazenados a 5 o C por 16 dias, sendo analisados a cada quatro dias em laboratório, no período de janeiro a fevereiro de 2004. A presença significativa de coliformes não foi verificada tanto a 35º C quanto a 45º C. As contagens para aeróbios psicrotróficos, mesófilos e fungos mantiveram-se dentro do padrão aceitável até o 12º dia de estocagem. Como o processamento foi realizado dentro das boas práticas de fabricação, conclui-se que o produto manteve sua qualidade higiênico-sanitária e, portanto, sua segurança para o consumo até 12 dias de armazenamento.Descritores: Manipulação de alimentos; Microbiologia de alimentos; Frutas; Ananás (abacaxi), tecnologia de alimentos.
Dairy desserts containing Caesalpinia pulcherrima seed galactomannan were evaluated to determine their static and dynamic rheological behaviors. Variations in consistency index (k), flow behavior (n), yield stress and thixotropy of the desserts indicated that the galactomannan caused an increase in the shear stress and apparent viscosity of the system. All samples exhibited shear-thinning behavior with flow behavior index values (n) between 0.06 and 0.37. Dynamic rheological behavior was evaluated for MD (high solid levels) and MD/2 (half the amount of solids) groups, and both G’ and G’’ moduli were depended on the frequency. The MD and MD/2 groups showed variations in the elastic modulus (G’) throughout the temperature range (mainly at 50 °C), showing greater sensitivity at high temperatures. C. pulcherrima galactomannan was able to promote synergism with starch, milk protein and sucrose and to improve the development of stronger and more resistant gels.
