The object of this experiment was to study physicochemical and sensorial traits in the 11th and 13th ribs of 24 Santa Ines (SI), 24 1/2 Ile de France × 1/2 Santa Inês (ILE × SI) and 8 1/2 Texel × 1/2 Santa Inês (TE × SI), slaughtered at different weights (30, 35, 40 and 45 kg, respectively). Subjective measurements (marbling, colour and texture) were carried out on the Longissimus dorsi, as well as initial pH (0 h) and final pH (24 h) after slaughter. The experiment was in a 3 × 4 factorial design and analysed using general linear model and correlation procedures in SAS®. Breed group did not influence colour (3.32), shear force (3.57 kg-force (kgf)) or loss in cooking (24.05%) of the L. dorsi, but slaughter weight affected these, with stronger colour, tougher meat and greater loss in cooking as slaughter weight increased. For sensorial analysis, the L. dorsi were cut, identified and evaluated by 30 untrained judges using a linear scale. Significant differences were detected in preference (6.61 points), tenderness (6.32 points), succulence (6.33 points) and flavour (7.08 points) of the meat from different breed groups and slaughter weights. For preference, all meats were well accepted although the crossbred animals slaughtered at 45 kg were less acceptable.
Resumo. O bem-estar animal apresenta premissas da preocupação com o animal de produção, pois o mesmo possui direito de expressar seu comportamento natural e ter acesso as suas necessidades fisiológicas, psicológicas e comportamentais. Estudos apontam aumento na produção e reprodução quando o animal tem acesso às cinco liberdades, pois o animal com uma boa genética pode expressar todo o seu potencial produtivo ou reprodutivo, de acordo com suas aptidões, além de melhorar a qualidade do produto final. Portanto, o objetivo desta revisão é apontar quais são as perspectivas e influência do bemestar animal na produção, sua interferência na produtividade e economia. Dentro destas perspectivas de produção, o bem-estar animal proporciona maior lucratividade, pois surge o perfil de consumidor ético, que deseja comprar alimentos de origem animal que estiveram sob condições de bem-estar durante seu ciclo de vida até o abate, onde o animal não passou por sofrimentos e pode expressar seu potencial de produção e reprodução, além de atender a exigência do mercado externo.Palavras chave: comportamento, cinco liberdades, economia, ética, estresse Well-welfare and it's prospect in animal productionAbstract. Animal welfare presents premises of concern with the production animal, since it has the right to express its natural behavior and to have access to its physiological, psychological and behavioral needs. Studies show an increase in production and reproduction when the animal has access to the five freedoms, since the animal with a good genetics can express all its productive or reproductive potential, according to its abilities, besides improving the quality of the final product. Therefore, the purpose of this review is to raise the prospects and influence of animal welfare in production, its interference in productivity and economy. Within these production perspectives, animal welfare provides greater profitability, as the profile of an ethical consumer arises, who wishes to buy food of animal origin that has been under welfare conditions during its life cycle until slaughter, where the animal does not suffered from suffering and can express its production and reproduction potential, in addition to meeting the requirements of the foreign market.
-This work aimed to investigate the relationship between echogenicity, testicular biometry, and accessory gland biometry and evaluate the echogenicity pattern of these structures in Santa Ines rams. Fifty-four healthy Santa Ines sheep were classified into three age groups: group 1 -3 to 5 months (pre-pubertal); group 2 -7 to 11 months (pubertal); and group 3 -13 to 28 months (sexually mature). The averages of testicular biometry and bulbourethral gland biometry were different among age groups. The testicular parenchyma was homogeneous with low echogenicity (pre-pubertal group) and medium echogenicity (pubertal and sexually mature groups), suggesting that testicular echogenicity can be a helpful tool to identify the start of puberty. The accessory glands were heterogeneous with low echogenicity in all age groups. Correlations were high between weight, biometry of testis and of bulbourethral gland and echogenicity of the accessory glands, indicating that sexually mature rams with higher body development have larger testicles and larger glands. We recommend the use of testicular biometry as a complementary evaluation of the reproductive efficiency of Santa Ines rams. The average values of echogenicity and the biometry of accessory glands are important parameters to assist the selection of breeding rams.

RESUMOCom essa revisão, objetivou-se traçar a trajetória dos estudos sobre as características físicas, ambientais e genéticas de resistência à mastite. Uma característica complexa e multifatorial pode ser adquirida por traumas físicos, alterações fisiológicas e metabólicas, microrganismos patogênicos ambientais ou contagiosos e por componentes genéticos envolvidos na resposta imune. As maiores perdas estão relacionadas à diminuição da produção e qualidade do leite, menores ganhos genéticos anuais e baixa intensidade de seleção, sendo citada como a principal doença da bovinocultura leiteira.Diante disso, novos critérios de seleção foram estabelecidos para aumentar a produção de leite e a resistência à mastite, além da melhoria do ambiente. Estudos genômicos têm sido recomendados quando há dificuldade na coleta de dados fenotípicos e a herdabilidade da característica avaliada é baixa.Além do mais, eles são utilizados como ferramenta auxiliar ao melhoramento genético clássico para aumentar a resistência genética a doenças e desenvolver soluções tecnológicas inovadoras. Muitos trabalhos foram realizados para identificar e estudar genes candidatos envolvidos na resposta de resistência à mastite que estão correlacionadas com lócus de características quantitativas (QTL -Quantitative Trait Loci) em programas de seleção assistida por marcadores moleculares. Isto permite a seleção mais rápida e precisa de bovinos pelo seu valor genético genômico, estimado a partir de equações de predição, tornando o melhoramento genético um componente de uma estratégia de longo prazo para o aumento da resistência à mastite e melhoria da qualidade do leite.
