Time–intensity analysis was applied for sweet and sour tastes and strawberry flavor of six commercial brands of strawberry jam. For this test, 11 subjects, between 25 and 35 years old, were selected from an initial 12‐member group. An affective test, with 117 consumers was also carried out and the results were analyzed by internal preference mapping. The least accepted samples were the ones with the lowest sweetness intensity, indicating that jam consumers prefer sweeter products. Also, one of them presented a higher sourness intensity, which may have had a negative influence on its acceptance. It is important to point out the fact that those least accepted samples were the low‐calorie products. The internal preference mapping and cluster analysis showed two consumer clusters. The first one was a higher concentration of consumers toward traditional samples, and the second one showed a lower concentration of consumers in the direction of one of the low‐calorie samples. PRACTICAL APPLICATIONS Time–intensity analysis is used in order to obtain the temporal profile of an attribute in a certain product. This technique is different from the conventional descriptive analysis because it allows the verification of changes in the perception of a product's attribute over time. Consumer preference responses are usually heterogeneous, and averaged consumer data may not be representative of any individual opinion. Thus, the awareness of interindividual differences in preference behavior gave rise to an increasing popularity of consumer segmentation. In this case, a preference map is applied. Observing both descriptive and affective data at the same time, it is possible to determine which attributes have influenced the consumer's preference.
Vitamins are organic compounds essential for normal physiological functioning and they need to be provided in adequate amounts by the diet. They are nutrients mainly associated to fruit consumption, playing an important role in the cellular function, growth and development of individuals. The present study aimed to analyze levels of vitamins B, C and carotenoids of fruits from the agrobiodiversity of Northeastern Brazil, among them cajuí ( Anacardium spp ), murici ( Byrsonima crassifolia (L.) Kunth), pequi ( Caryocar coriaceum Wittm.), jenipapo ( Genipa americana L.), mangaba ( Hancornia speciosa Gomes), bacuri ( Platonia insignis Mart.), cajá ( Spondias mombin L.), umbu-cajá ( Spondias bahiensis P. Carvalho, Van den Berg & M. Machado), umbu ( Spondias tuberosa Arruda), pitanga ( Eugenia uniflora L.), araçá ( Psidium sobralianum Landrum & Proença). The vitamins were quantified using the analytical method High Performance Liquid Chromatography (HPLC). Vitamin B complex levels varied from 0.003 ± 0.01 mg/100 g to 6.107 ± 0.06 mg/100 g. Vitamin C ranged from 0.36 ± 0.06 mg/100 g to 253.92 ± 9.02 mg/100 g. Carotenoid values ranged from 0.12 ± 0.02 μg/100 g to 395.63 ± 113.69 μg/100 g. Thus, the profile of water-soluble vitamins and carotenoids of the fruits analyzed was quantified. Therefore, these fruits can provide varied amounts of vitamins important to human health. However, it is interesting for the individual to consume fruits in a diversified manner, avoiding monotony and thus guaranteeing the daily intake of more nutrients.
Three paste formulations were developed for four fruits: caja, murici with mango and pitanga, with differentiated percentages of fruit pulp, organic honey and gellan gum. Pulps, honey and fruit paste formulations were analyzed by antioxidant capacity, vitamin C and in vitro bioaccessibility. All formulations showed a high content of vitamin C, antioxidant action and the bioaccessibility. All the formulations were accepted regarding the overall impression, except MM3 (murici pulp:mango pulp:honey 50:50:00 and 0.25% gellan gum) and PO1 (pitanga pulp: honey 90:10 and 0.6% gellan gum). Therefore, fruit pastes are options to encourage consumption of tropical fruits of agro-biodiversity in the Brazilian Northeast.
A prática de atividade física, aliada a hábitos alimentares saudáveis, é considerada eficaz na prevenção de doenças crônicas não-transmissíveis, principalmente, do sobrepeso e da obesidade, tanto que a Organização Mundial de Saúde recomenda a realização de exercícios físicos de forma frequente desde a adolescência, como forma de evitar quadros nutricionais indesejáveis. Nesse sentido, a presente pesquisa buscou avaliar as implicações da inatividade física e de práticas alimentares inadequadas sobre o perfil nutricional de adolescentes com idade entre 15 e 18 anos, matriculados em uma escola pública de ensino médio de tempo integral do município de Fortaleza/CE, Brasil. Para tanto, foi realizado o levantamento dos dados antropométricos deste público, assim como a aplicação de questionário validado, contendo interrogações acerca de seus modelos de alimentação e práticas de atividades físicas. Observou-se, portanto, que a maioria dos alunos, independente do estado nutricional, realiza atividade física, contudo, grande parte dos que apresentaram sobrepeso e obesidade não souberam informar a frequência e o tempo dedicados a elas. Constatou-se, ainda, que os estudantes com sobrepeso, obesidade e obesidade grave realizavam exercícios físicos em um tempo diário inferior ao recomendado pela Organização Mundial de Saúde. Quanto às práticas alimentares inadequadas, essas se destacaram em todos os grupos, mas em menor frequência entre os obesos. Pôde-se concluir que a realização de atividade física com frequência e tempo determinados são de extrema importância e deve ser orientada pelas autoridades de saúde, para que, aliada a hábitos alimentares saudáveis, previnam-se os quadros nutricionais indesejáveis.
Inúmeros fatores justificam o aumento do número de casos de sobrepeso e obesidade entre a população brasileira nas últimas décadas, entre eles a inserção da mulher no mercado de trabalho, realidade que altera a estrutura familiar e os modelos de alimentação, sobretudo, de crianças e adolescentes. A presente pesquisa objetiva avaliar os impactos da inserção feminina no mercado de trabalho sobre o estado nutricional de escolares adolescentes, por meio da análise dos hábitos alimentares e do perfil antropométrico de 67 estudantes do 1º ao 3º ano do ensino médio, de uma escola pública de tempo integral no município de Fortaleza/CE. Essa avaliação foi viabilizada pela aplicação de questionário validado junto aos alunos e pela leitura de seus dados antropométricos, utilizando como parâmetro os gráficos de referência das curvas de crescimento da Organização Mundial de Saúde (OMS), onde esses valores foram correlacionados com a idade e o sexo dos voluntários e convertidos em escores-z. Assim, pode-se perceber que 53,8% dos estudantes com sobrepeso têm suas mães inseridas no mercado de trabalho, 80% dos alunos obesos aparecem entre o grupo de famílias sustentadas pela mãe e 50% dos que receberam diagnóstico para obesidade grave estão entre os adolescentes providos pela figura materna. Dessa forma, pondera-se que a mulher ainda desempenha o papel de cuidado no contexto familiar e que se faz urgente a implementação de ações de Educação Alimentar e Nutricional nas escolas no sentido de promover, entre os alunos, práticas alimentares saudáveis por meio do desenvolvimento de sua autonomia.
