Разработан напиток функционального назначения на основе растительного сырья и экстракта растения Hoodia gordonii (H. gordonii). В эксперименте использованы плодово-ягодные соки прямого отжима настои чайного листа, сухие растительные экстракты черного винограда (кожицы, гребней), листа черной смородины. Рецептура функционального напитка разработана с использованием органолептического анализа методом свободного профилирования с последующим построением профилограмм. Подобрано оптимальное соотношение купажа соков и чаев-1:0,65. Физико-химические показатели определены инструментальными методами: содержание сухих веществ, общей (титруемой) кислотности, водородный показатель (рН) красящих веществ (антоцианов), содержание микроэлементов (Fe, Cu, Zn, Mn) и макроэлементов (Na, K, Mg, Ca); установлено, что содержание в функциональном напитке таких токсичных элементов, как мышьяк (As), кадмий (Cd), свинец (Pb), ртуть (Hg) соответствует требованием технического регламента (ТР ТС 021 «О безопасности пищевой продукции») и не превышает предельно допустимых концентраций. Определены сроки годности разработанного функционального напитка, которые составили ~ 3,7 месяца. Использован метод ускоренного испытания сроков годности ASLT (Accelerated Shelf-Life Testing), основанный на модели Аррениуса. Испытание проводили при температуре 40 и 50ºС.
