The ability of 4-MP and DP to decrease EtOH-induced cpp suggests that a reduction of ACD levels is crucial in depriving EtOH from its motivational properties as indexed by the cpp procedure. In addition, this conclusion is supported by the inefficacy of 4-MP in preventing ACD-induced cpp, and by its blockade observed after administration of the selective ACD sequestrating agent DP. The present results underscore the role of EtOH-derived ACD in EtOH-induced motivational properties as well as its abuse liability.

INTRODUZIONELa provoletta di latte vaccino sardo (peretta, provola) è un formaggio a pasta filata tradizionale della regione Sardegna (1), ottenuto con l'impiego di caglio di vitello. La peretta può essere realizzata con tecniche di lavorazione tradizionali in caseifici artigianali o industriali. Presenta caratteristiche estremamente variabili in relazione alla provenienza del latte da allevamenti intensivi o estensivi, trasformato crudo o a seguito di termizzazione o di pastorizzazione. La provoletta ha peso compreso fra i 400 g e 1-2 Kg. La durata della stagionatura, in relazione all'uso, è compresa fra due giorni e tre mesi (grattugia). Sul mercato è frequente la commercializzazione di prodotti analoghi ottenuti dalla filatura di cagliate di provenienza comunitaria. La tecnologia di produzione presenta variabili rappresentate dall'utilizzo di colture di avviamento naturali o selezionate, dai tempi e dalle temperature di acidificazione e di filatura. Nei prodotti lattiero-caseari la microflora che interviene nell'acidificazione e nei processi di maturazione, costituita da specie apportate dalle colture di avviamento o da batteri lattici non-starter, esercita notevole influenza sulle caratteristiche sensoriali, di tipicità e di sicurezza (2;3). Il presente lavoro si propone di studiare e di caratterizzare la microflora lattica delle provolette di latte vaccino sardo prodotte in tre caseifici della Comunità Montana del Monte Acuto, con l'utilizzazione di differenti tecnologie di trasformazione.

SUMMARYIn this paper are reported the results of the characterization of the lactic acid microflora isolated from Sardinian "provoletta", a traditional pasta filata cheese obtained from cow's milk. Cheese samples from two batches were taken in triplicate from three dairy plants after 7 and 21 days of ripening. Each sample was analyzed for mesophilic and thermophilic lactic acid bacteria (LAB Lactis. Enterococci were the most common isolates, they were recovered from all the dairy plants and from all the products analysed at 7 and at 20 days of ripening. Although with some differences within the various producers, the technology used aids mesophilic LAB growth, guaranteeing a large biodiversity protection.
